WHere is an easy interpretation of a drink from the seasonal cocktail list. This is a batch prepared mix that is loaded with flavours associated with holiday season, rendering it perfect for hosting a festive gathering. Reserve the remaining cordial you can use for morning drinks, puddings, or for more rounds of bikinis.

The Bikini Cocktail

Yields 10 servings

To make the Citrus Syrup (yields 750ml)

300ml fresh clementine juice
200ml recently pressed lemon juice
500g granulated sugar

Ingredients for the Drink (makes 850ml, enough for 10)

400ml premium vodka
100ml dry gin
150ml peach liqueur
200ml clementine cordial (see above)
Whole cranberries, for garnish
Mandarin essential oil, as a final touch

Method

To prepare the Syrup: Place the listed items in a saucepan, heat until it reaches a light boil, agitating so the sugar melts. Next, take off the heat and let it to cool down entirely. Decant into an sterilised bottle, cap it keeping it in the refrigerator, it will last for about four weeks.

For the Cocktail Base: Mix all the liquids into a large bottle, let it rest for an hour, then strain best through a fine cloth, making it perfectly clear.

For serving: Measure 85ml from the cocktail base into your cocktail shaker containing ice, and agitate lightly for one minute to cool it down. Strain to a cold coupe glass or a similar vessel, decorate with the cranberries adding the final touch by giving it a light spray of the essential oil over the top.
